Spinach with avocado, feta, crispy pancetta and pine nuts

This is a really easy salad but it just tastes so good.

A healthy salad which is ideal for lunch or supper as it only takes 5 minutes to prepare.

Serves 2

 

Ingredients:

80 g spinach leaves

75 g peas (fresh when in season), cooked

100 g bacon lardons (omit if you are vegetarian)

50 g feta cheese

1 ripe avocado, sliced

1 tbsp lemon juice

1 tbsp olive oil

2 tbsp of pine nuts

2 tbsp flat leaf parsley, chopped

1 tsp fresh red chilli flakes (optional)

Freshly ground black pepper

Method:

  • Heat a non-stick pan and fry the bacon lardons until crispy and golden brown. Remove and place onto a plate lined with kitchen paper.
  • In a bowl mix the spinach leaves together with all the remaining ingredients and add some freshly ground pepper.
  • To serve, spoon into salad bowls and sprinkle with chilli flakes. 

* Serve with some crusty bread if you wish.
